We're officially in December and with the holidays looming, I needed a quick and healthy meal that I can make on the fly.
Between the presents, online shopping, and decorating, I needed some veggies in my life, and this recipe is absolutely perfect.
About Greek Meatballs

Greek Meatballs are also known as Keftedes. It's a mixture of ground meat with breadcrumbs, and herbs.
My version has a twist - it includes delicious feta cheese that melts inside the meatball, giving you a delicious texture and taste in each bite!
Your whole family will love this delicious recipe. Eat it with veggies, orzo, or serve with a greek salad!

About the Recipe
This recipe couldn't be easier. Once you have your ingredients, you'll combine in a large bowl until everything is mixed together really well.
I like using plastic gloves for this so my hands don't get full of meat, but you do you!
After you have your meatballs made, you'll heat up some canola oil in an oven safe skillet and sauté the top and bottom until they're nice and brown.

Then, you'll transfer to the oven for a few minutes to let the middle of the meatball cook, and there you go!
I love serving these with plenty of fresh veggies and then drizzle with olive oil.
You could also serve with tzatziki sauce, a lemon herb butter, or pita. I also love garnishing with fresh herbs like rosemary or dill!

Meatball Ingredients:
- 1 lb ground beef
- ½ cup feta
- ¼ cup breadcrumbs
- ½ small white onion, diced
- 2 cloves garlic
- 2 eggs
- ½ tsp dill
- ½ tsp salt
- ½ tsp pepper
- ½ tsp mint
- ½ tsp oregano
Cooking + Serving Ingredients:
- 1 tbsp canola oil
- sliced cucumbers, for serving
- sliced red onion, for serving
- extra virgin olive oil, for serving
Directions
Preheat oven to 350 degrees F.
Combine meatball ingredients in a large bowl and mix well.
Roll into meatballs, about 1 in thick. Set aside.
Heat a large oven safe skillet over medium heat. Add canola oil to the pan. When the oil is warm, add meatballs to the skillet and cook 3-4 min on the top and bottom of the meatball.
Transfer skillet to the oven, and cook for 5 minutes or until cooked through.
Serve with sliced veggies and drizzle with extra virgin olive oil.
