I love serving this for an Easter brunch or as a spring appetizer. But this tart is really delicious year round!

Recipe Inspiration
I thought of this recipe a few weeks ago while I was on a walk with my husband. It was one of the first warm, crisp sunny days of the year, and we were able to get in a 4 mile walk in the evening.
It was so nice to enjoy the fresh air, and while we were walking, BAM, the idea for this tart came into my mind.
As soon as I thought of it, I could taste it. Flaky puff pastry, a lemony spiced whipped goat cheese, roasted asparagus, and lemon slices. I knew I needed to make it ASAP.
So that weekend, I made it for my family, and they LOVED it. I knew I needed to share the recipe!

This recipe is truly SO easy - there's less than 10 ingredients and only a few steps to this delicious tart! Let's walk through the steps below:
Step 1: Preheat Oven
Preheat your oven to 400 degrees F.
Step 2: Make Whipped Goat Cheese
Time to make your whipped goat cheese. Using a large food processor is best for this.
If you don't have a food processor, check out this one on Amazon. I have it and it works like a charm every time!
To make the whipped goat cheese, you'll combine the cheese, extra virgin olive oil, lemon juice, salt, pepper and red flakes, and then pulse until whipped. You want a really light and airy whipped texture. It's SO delicious and just perfect for this tart.
If you love the whipped goat cheese as much as I do, you can make extra and save it for a charcuterie board for the weekend. Yum!
Step 3: Puff Pastry
Next, unroll your puff pastry. You can make your own, but using store bought make it so much easier! I love using refrigerated puff pastry, so you don't need to worry about thawing. For this tart pictured below, I cut mine in half, making two tarts, but you can keep it whole and make one large tart.
Unroll the puff pastry on parchment on top of a baking pan. Spread the whipped goat cheese all along the puff pastry, reserving about ½ inch for a crust.
After you've spread your goat cheese, top with asparagus. Feel free to get creative here and make pattern if you want!
Step 4: Bake
Bake your tart for 25 minutes, or until the puff pastry is golden brown.
Step 5: Garnish and Serve
Garnish your tart with lemon slices. It adds a fantastically fresh feel to your tart and is just gorgeous! Cut in small or large pieces, and serve.
Lemon Asparagus Tart FAQ
Feta would be a good substitute for goat cheese. Additionally, you could try mozzarella or brie, but these have not been tested for this recipe.
Definitely. Carrots, potatoes, and peas would be good spring produce swaps. For carrots and potatoes you may need to cook them before adding them to the tart, or increase cooking time.
You may use store bought, frozen puff pastry, but make sure that it is fully thawed but still cold before using it in the recipe. I recommend moving puff pastry from the freezer to the refrigerate for at least 24 hours before using it.

Hi there! A standard baking sheet will do just fine. Check out how big your puff pastry is and just make sure it will fit completely on the pan! Most puff pastry won't take up an entire sheet pan. If it does, just cut the puff pastry in half so it fits. 🙂

How large is a “standard” baking pan? I have several…9x13, 1/4 sheet, 1/2 sheet (17x12.5). Just want to be prepared.
