Recipe Inspiration
This recipe was inspired by breakfasts I had on my honeymoon in Hawaii. Almost every morning, we had short grain white rice, eggs, and soy sauce, and it is still one of my favorite breakfasts to this day.
I wanted to add a little more nutrition, and by adding tomatoes, arugula, and avocado, these delicious breakfast bowls are a great healthy option for a busy day.
I love making these on a Saturday morning to fuel up for a long day ahead. Coffee is optional but highly encouraged!
Easy Veggie Breakfast Bowls Ingredients
Here are the ingredients you will need for this recipe:
- Rice - you may use short or long grain white or brown rice, whichever you prefer or have on hand
- Olive Oil
- Eggs
- Salt and Pepper
- Avocado
- Arugula
- Cherry Tomatoes
- Soy Sauce
Directions
Let's make these easy veggie breakfast bowls together! In a medium skillet, heat olive oil over medium heat. Crack eggs and add to the skillet.
Fry eggs for three minutes, then cover with a lid to finish cooking. Sprinkle with a pinch of salt and pepper and remove from the heat.
Assemble bowls by dividing rice between bowls and adding sliced avocado, arugula, cherry tomatoes, and egg to each bowl. Top with soy sauce, serve, and enjoy!

How long should the lid remain on the eggs to finish cooking?

Hi Georgia! It depends on how you like your eggs done. If you want them runny, cover for 1-2 minutes, until the whites are totally set but the yolk is still jiggly. If you like your eggs over medium, cover for 2-3 minutes until the yolks are more set.
