Recipe Inspiration
This recipe was inspired by going to my local farmers market. With the pandemic the last year, I haven't been able to visit my favorite farmers market, but as more things open up outdoors, I've loved starting to go back to the famers market again!
I've been so inspired by the freshness of spring this year - maybe it's because it resembles a new beginning and new life after things have been closed for so long.
Or maybe it's just because I love fresh asparagus!
This recipe is truly so easy - and if possible, is best enjoyed with close and healthy family and friends.
This recipe is great paired with a crisp white wine, like a dry Riesling or a Sauvignon Blanc. If you're looking to add even more flavor to this dish, I recommend adding fresh microgreens or fresh basil to top.
About the Recipe
If you've visited my blog before, you know how much I absolutely LOVE pasta. It's by far my favorite food! So I'm extremely excited to share this new pasta recipe with you - you are going to love it.
This recipe couldn't be easier! Let's walk through the steps to make this easy pasta recipe:
Step 1: Make the Pasta
Make one pound of your favorite pasta. I like smaller shapes for this recipe, but you can definitely use a longer shape like linguine. I used gemelli in the recipe photos - if you've never had it before, check it out! You can get the gemelli pasta shape at a good grocery store or you can find it on Amazon, I love this brand!
Bring salted water to a boil and cook pasta of your choice until it's al dente. When the pasta is al dente, reserve one cup of pasta water, then drain pasta and set aside.
Step 2: Make the Sauce
While your pasta is cooking, you'll start on the sauce. Heat olive oil in a large skillet and saute the onion until translucent. Add garlic, red pepper flakes, white wine, and salt and pepper, and simmer everything for 3 minutes.
Next, add asparagus, peas and lemon juice to the pan.
Step 3: Combine and Enjoy!
Finally, add pasta to the pan and stir well. If it seems dry, add pasta water 1 tbsp at a time until the pasta reaches your desired consistency.
Serve in a large bowl and top with crumbled feta cheese.
