Protein Blueberry Oat Bars are the breakfast you didn't know you needed.
This unlikely marriage of peanut butter, protein powder, blueberries, and oats may make you skeptical.
But trust me, once you try this, you will be amazed how delicious these babies are.
I need to give my husband all the credit for this recipe. He has in search for a filling and healthy breakfast that will keep him going when he's working long hours.
This is the outcome of that search. When I first took a bite, I was shocked at how delicious there were!
This recipe barely uses any sugar and uses almond flour, so it's a great low carb breakfast full of protein.
I will say that these are FILLING! They are meant to be a full breakfast replacement, so don't worry about all the peanut butter. This recipe will get you at least 10-12 sizeable bars so it's spread throughout.
You'll Need:
- ½ cups peanut butter
- ½ cup brown sugar
- 2 cups oats
- 1 cup almond flour
- 3 scoops protein powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 2 tsp vanilla extract
- 1 ½ cups vanilla greek yogurt
- splash of milk
- 2 eggs
- 1 cup blueberries to top
Protein Blueberry Oat Bars Recipe:
Microwave peanut butter in 1 minute intervals until it is smooth.
While melting peanut butter, mix all dry ingredients together in a large mixing bowl.
Pour peanut butter into the bowl and stir, adding yogurt and eggs intermittently.
Stir until it all ingredients are incorporated, and splash some milk if the mix seems too dry.
Spread into pan and bake at 350 degrees for 25 minutes or until center is cooked. Enjoy!
