I think galettes are my favorite dessert. They are incredibly easy to make and taste like you've been working in the kitchen for hours.
This fall, I went apple picking at Rittman Orchard in Doylestown, Ohio. The whole experience was magical.
We picked apples, we bought apple and pumpkin butter, and we walked around a pumpkin patch. Basically, we did all the fall things.
My favorite part of the day was discovering that this local family owned farm makes their own wine and hard cider!! I was absolutely impressed and took some wine to go.
But my second favorite part was the apples! So many apples. I honestly didn't even know there were so many apple varieties out there.
We bought an enormous bag and filled to the brim, so when we got home, we were faced with how to start a dent in our new-found pile of apples.
And the pumpkin spiced apple galette was born.
This recipe is ridiculously easy, and I bet you have most of the ingredients in your pantry right now.
My short cut for this recipe is store bought puff pastry. Let's be honest - it's fantastic to make your own, but it's time consuming and messy.
If you are short on time, store bought puff pastry brings this baby together in under 40 minutes. If you want to make your own, you go girl.
So grab your apples and let's get cooking - this pumpkin spiced apple galette is perfect for fall.
Ingredients
- ¼ cup honey
- 1 tsp pumpkin pie seasoning
- 1 tsp ground cinnamon
- ¼ cup maple syrup
- 1 tbsp vanilla extract
- 1 sheet thawed puff pastry
- 4 apples (use any kind you like!), cored and sliced thinly
Pumpkin Spiced Apple Galette Recipe
Preheat oven to 400 degrees.
In a small pot, combine honey, maple syrup, pumpkin pie seasoning, cinnamon, and vanilla and bring to a boil over high heat. Let simmer for about a minute, stirring frequently. Take off heat and set aside.
Next, roll out your puff pastry on a lined baking sheet.
Arrange your apples on the puff pastry, leaving about an inch on each side.
There's no right way to arrange a galette, so feel free to arrange your apples vertically, horizontally, or all over the place. I promise it will be beautiful and taste delicious.
After your apples are arranged, fold over your pastry over the apples on all sides.
Take half of your pumpkin spiced honey and maple syrup and drizzle over the apples and brush over the edges of puff pastry. Make sure you spread this evenly!
Bake your galette for 30 minutes, or until your apples are done and the crust is golden-brown.
Finally, drizzle with the remainder of your pumpkin spiced honey and maple syrup. Serve warm and enjoy!

Love working with puff pastry, always makes for a great dish! This worked out perfectly, we don't have pumpkin pie spice in UK so I made my own using cinnamon, ginger, nutmeg,allspice and ground cloves.
