Cauliflower is one of my favorite vegetables! It's super versatile and so delicious. I wanted to create a roasted cauliflower recipe that had Italian flavors as a versatile side dish. It came out so good!
The crispy edges of the cauliflower are SO good. Plus, each bite is flavor packed, making it a perfect side dish for the whole family.
This is now my favorite way to make cauliflower. It's a delicious side dish and great as a healthy snack. I even eat it as a meal over orzo or white rice.

Preheat oven to 400F.

Combine raw cauliflower florets, tomatoes, olive oil, Italian seasoning, lemon juice, garlic powder, salt, and black pepper in a large bowl. Toss and transfer cauliflower to a baking sheet lined with parchment paper.
