Sesame peanut noodles are one of my husband's favorite weeknight meals.
These noodles are super easy to make and make a great entrée or side dish on busy weeknights.
This is also a great meal prep option!
This recipe has a funny story. The summer after I graduated college, I was waiting to start my "big girl" job and my husband was waiting to start med school.
Needless to say, we were broke. I bought two twenty-four packs of Ramen, and after getting sick of the soup after a few meals, I needed to get creative.
So I started to try out different sauces with ingredients I had on hand.
This was the winner and has since been one of my go-to meals when I need something quick and comforting. You can't beat a cheap, weeknight meal that's ready in 15 minutes!
Sesame Peanut Noodles Recipe Ingredients
- Two packages instant ramen or your favorite noodle
- 3 tbsp peanut butter
- 2 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tbsp olive oil
- 2 tsp sesame seeds
- chopped peanuts, for serving
- chopped green onion, for serving
- chili oil, for serving
Recipe
Cook instant noodles according to package instructions.
While noodles are cooking, microwave peanut butter in a microwave safe dish until it's very smooth.
Add in your sesame oil, soy sauce, olive oil, and sesame seeds. Stir well.
Taste and make sure the flavors are even. If you need more sesame oil or soy sauce, add more to even the flavors out.
When your noodles are done, drain and toss in your sesame peanut sauce.
Top with chili oil, green onions, and chopped peanuts.
