It's BBQ season, which means I'm living for delish dishes on the grill with simple and fresh sides. This Simple Pasta Salad will be on my table all summer long.
This dish is all about simplicity.
This pairs so well with grilled chicken and cilantro-parsley salsa!
I'm making it every weekend because it's so dang GOOD!
A Simple Classic
This pasta salad keeps it super simple. Chop up some veggies, add some seasoning, and toss with pasta. Serve it warm or cold.
Serve it as a side or main with protein like chicken, pork or steak. Whatever goes!
This dish also travels extremely well, and if you want, you can even make it ahead of time! What could be better?
You'll definitely want save or print this one out for your next BBQ, or for 4th of July weekend.
Ingredients
- 1 lb pasta (I think using smaller shapes is best!)
- 2 green peppers, chopped
- 1 cup cherry tomatoes, sliced in half
- 8 oz. package fresh mozzarella, cut in small pieces
- 1 tsp Italian seasoning
- 1 clove garlic, minced
- 2 tbsp Italian dressing
- fresh basil
Simple Pasta Salad Directions
In a large pot, bring salted water to a boil. Cook pasta according to package directions.
After pasta is cooked, drain and let cool 10 minutes.
Combine peppers, tomatoes, mozzarella, Italian seasoning, garlic, and Italian dressing in a large bowl and stir well.
Add pasta and mix well. Taste test and add more seasoning or dressing if needed. Top with fresh basil and serve warm or cold.
