Vegan cauliflower tacos are one of my go-to easy dinners these days.
I always have corn tortillas on hand, and often a head of cauliflower in the fridge.
I also normally have onions, jalepenos, cilantro, garlic, limes, and of course, olive oil on hand.
All of this together creates a truly delicious taco - you won't miss the meat. I promise.
I start my roasting the cauliflower until it's niiiiice and crispy. Like really crispy. I personally love those burnt cauliflower edges, but if you don't that's cool too.

Next, the salsa. Sometimes I throw everything in the food processor, and other times I'll roughly chop the ingredients and make a chunky salsa. Whatever works!
These tacos are perfect for quick dinners, or for a fun take on Taco Tuesday. I've even made a big tray of these when hosting and created a build-your-own taco bar, and it was a huge hit.

Vegan Cauliflower Tacos Ingredients
For the tacos:
- 1 head cauliflower, chopped in small pieces
- 2 tbsp olive oil
- ½ tsp each turmeric, curry powder, paprika, cumin
- flour or corn tortillas, for serving
For the salsa:
- ¼ cup extra virgin olive oil
- 2 garlic cloves, chopped
- 1 jalapeno, chopped (remove the seeds if you don't want spice!)
- small white onion, chopped
- bunch cilantro, chopped
- juice of one lime
- salt and pepper, to taste
Directions
Preheat oven to 450 degrees F. Line cauliflower on a large baking sheet.
Combine olive oil with turmeric, curry powder, paprika, and cumin. Pour over cauliflower and mix well, so the cauliflower is covered with the spice mixture.
Cook for 20 minutes. Then, flip cauliflower and cook for an additional 15 minutes.
While your cauliflower is roasting, combine ingredients together. If you want a chunky salsa, taste to make sure the flavors are right, then leave as is.
If you want a smooth salsa, combine all ingredients in a food processor and pulse until smooth, adding more lime juice or olive oil if needed.
After your cauliflower is done, warm up your tortillas in a pan, letting them slightly bubble. Serve cauliflower on the tortilla with lots of salsa. Enjoy!
