Carrot and Lentil Soup

1. Gather the ingredients.

2. Sauté carrots until softened.

3. Add garlic, seasonings and lentils.

4. Add tomato puree and vegetable stock.

5. Blend with an immersion blender until smooth.  Add coconut milk and stir.

6. Top with parsley.  Serve and enjoy!
