Roast Pumpkin Salad

1. Gather the ingredients.

2. Combine pumpkin slices, olive oil, salt, and black pepper in a large bowl.

3. Roast for 25 minutes, or until golden brown.

4. Combine extra virgin olive oil, honey, lemon juice, dijon, salt and pepper in a small bowl.

5. Combine mixed greens, roasted pumpkin, feta, and pepitas in a large bowl.  Drizzle with the dressing.

6. Serve and enjoy!
