  • 1 lb orzo cooked
  • ΒΌ cup good extra virgin olive oil
  • 2 packs of cherry tomatoes halved
  • 1 8 oz. package fresh mozzarella cut in pieces
  • pinch of sea salt
  • large handful fresh basil


  • Cook orzo according to package directions.
  • Combine orzo, olive oil, tomatoes, and mozzarella in a large bowl. Toss well.
  • Add a pinch of sea salt and stir well.
  • Top with a large handful of fresh basil and serve.
