salmon filets

olive oil
1
tablespoon
lemon juice
½
teaspoon
salt
½
teaspoon
black pepper

cup
cherry tomatoes
sliced
½
cup
kalamata olives
pitted
½
red onion
sliced
1
cup
crumbled feta cheese
1
cucumber
diced
2
tablespoons
fresh dill or rosemary
2
tablespoons
extra virgin olive oil
Instructions
Preheat oven to 400F.
Rub salmon filets with olive oil and place on a lined baking tray. Pour lemon juice over salmon, then sprinkle with salt and pepper.
Add tomatoes to the baking tray. Bake for 10-12 minutes, until salmon flakes with a fork.
While salmon is baking, combine kalamata olives, red onion, feta, cucumbers, fresh dill, and extra virgin olive oil. Toss well.
When salmon is done, top with salad mixture and serve.
