Add all ingredients to a cocktail shaker and allow to sit for a minute to infuse.
Muddle and then add ice to the shaker.
Shake until frosty. Finely strain over a coupe glass and garnish with a peach slice and a sprig of thyme.
Notes
If you want a sweeter cocktail, add more brown sugar! This will make bourbon taste less strong.
Make sure you use a very fine mesh strainer to strain the cocktail so you don't get the muddled peach and thyme strands in your drink.
