Spread butter over the outer side of sourdough bread. Lay bread slices in the pan, butter side down.
Place brie on one side of the bread, and add protein to the other. Toast for 4-5 minutes, until bread is golden brown.
Add apple on top of the chicken. Use a spatula to top one slice on the other, creating a sandwich. Place the lid on the skillet and allow cheese to melt for one minute.
Slice and serve.
