Easy Maple Roasted Carrots Recipe - Simple Side Dish
Christina Musgrave
These Maple Roasted Carrots are the perfect blend of sweet and savory. The carrots are coated in maple syrup, dijon mustard and a mix of seasonings and then roasted until they are tender and have lightly caramelized edges.
Combine olive oil, maple syrup, dijon, garlic powder, onion powder, salt, and black pepper in a large bowl. Whisk well, then add carrots and mix well.
Line a baking sheet with parchment paper. Arrange carrots on the baking sheet and bake for 30-35 minutes, until tender.
Notes
Recipe Tips and Tricks:
Cut evenly: Slice the carrots into similar sizes so they roast evenly and finish cooking at the same time.
Don’t overcrowd the pan: Spread the carrots in a single layer with space between them to help them caramelize instead of steam..
Roast until tender: The exact cook time may vary based on your oven and the thickness of your carrots, so check for doneness by piercing with a fork.
Recipe Storage and Reheating:
Refrigerator Storage: Store leftover roasted carrots in an airtight container in the fridge for up to 3-4 days.
Freezer Storage: You can freeze the roasted carrots in an airtight container or freezer bag for up to 2-3 months, though the texture may change slightly after thawing.
Reheating: Reheat the carrots in the oven at 350°F for about 10-15 minutes to help them stay crispy.
