Instructions
Marinate the shrimp: In a medium bowl, combine the shrimp, olive oil, soy sauce, garlic, cumin, honey, salt, black pepper, cayenne pepper, and lime juice. Toss well and let marinate for 15 minutes.
Cook the shrimp: Heat a large skillet over medium-high heat. Once hot, add the shrimp in an even layer and cook for about 2 minutes per side, until pink and cooked through.
Assemble the lettuce wraps: Spoon the cooked shrimp into the lettuce leaves. Top with shredded carrots, chopped peanuts, fresh cilantro, and a squeeze of fresh lime juice.
Serve immediately.
