Pat salmon fillets dry. Make a cut lengthwise, without cutting all the way through, down the filet to create a pouch. Sprinkle with salt and pepper and set aside.
Heat a skillet over medium heat. Add olive oil and spinach to the skillet and cook for 2 minutes, until the spinach starts to wilt. Remove from heat.
Add cream cheese, Swiss cheese, garlic, and red pepper flakes to the pan. Melt cheese into the spinach and stir well.
Gently stuff salmon with spinach and cheese mixture.
Line a baking sheet with foil or oven safe parchment paper. Spray with cooking spray. Place stuffed salmon on the prepared baking sheet and bake for 10 minutes.
