With its blend of fresh ingredients, an explosion of flavors, and a touch of Italian flair, this Eggplant Tomato Sauce is sure to become a family favorite!
Heat olive oil in a pot over medium heat. Add eggplant and sauté for 10 minutes, until golden brown.
Add garlic, cherry tomatoes, salt, Italian seasoning, and black pepper. Reduce heat to low, and sauté for 3-4 minutes, stirring frequently ensuring the garlic does not burn.
Add tomato sauce to the pot. Simmer for 10-15 minutes. Top with basil.
Serve with pasta, on chicken, or on roasted vegetables.
