cottage cheese

grated parmesan cheese

whole milk

black pepper

Chopped Italian parsley
for serving
Instructions
In a food processor, combine cottage cheese, parmesan cheese, whole milk, salt, black pepper, and garlic. Pulse until combined.
While the food processor is running on low, slowly add olive oil until combined.
Toss cottage cheese pasta sauce with cooked pasta and top with Italian parsley. Serve immediately.

Tips and Tricks:
Adjust the consistency
: If you find the sauce too thick, add a little extra milk, a splash at a time, until you reach your desired consistency.
Keep it warm
: If you’re not serving the pasta immediately, keep the sauce warm on low heat, stirring occasionally, to keep it creamy.
Make ahead
: You can prepare the sauce in advance and store it in the fridge for a day or two. Just reheat it gently before tossing with pasta.
