sweet potato gnocchi

sage leaves

unsalted butter
¼
cup
white wine
¼
teaspoon
salt
¼
teaspoon
black pepper
¼
cup
half and half
½
cup
grated parmesan cheese
Instructions
Heat butter in a large skillet over medium-low heat. Cook until butter melts and begins to turn golden, about 3-4 minutes.
Add sage and fry for 3-4 minutes. Remove sage from pan.
Add white wine, salt, black pepper, and half and half. Stir well and bring to a simmer. Let simmer for 5 minutes.
Cook sweet potato gnocchi according to package directions. Reserve ¼ cup cooking water before draining.
Add cooked gnocchi, pasta water, parmesan cheese and fried sage to the pan. Stir, serve and enjoy.
