This Salmon Caesar Salad is a fresh and delicious twist on a classic dish that is ideal for any meal. A perfectly pan-seared salmon filet tops crisp romaine lettuce, all tossed in a rich, homemade Caesar dressing with a hint of garlic and anchovy.
Heat a large skillet over medium-high heat and place salmon skin side down. Cook for 5-6 minutes, until the skin is crisp, then flip and cook for 2-3 minutes, until the salmon is cooked through.
In a large bowl, combine lemon juice, garlic, parmesan cheese, mayonnaise, anchovy paste, and dijon mustard. Whisk well.
Add romaine lettuce to the bowl and toss well. Top with shaved parmesan cheese, cooked salmon, and croutons. Serve and enjoy.
