These Twice Baked Mashed Potatoes are creamy and cheesy with a crispy bacon topping and a sprinkle of fresh green onions.

sliced bacon
cooked and chopped

green onion

Instructions
Place potatoes in a large pot and cover with water. Cover, bring to a boil, then reduce to a simmer. Cook for 20 minutes, until tender.
Drain potatoes and transfer to a large bowl. Let cool for 5 minutes, then mash with a potato masher.
Preheat the oven to 350F.
Add butter, salt, black pepper, cream cheese, whole milk, and sour cream to the potatoes. Stir until combined and the cream cheese is melted.
Transfer mashed potatoes to a greased baking dish. Top with cheddar cheese and bacon and bake for 30 minutes.
Top with green onion and serve.
