Heat a large cast iron skillet over medium heat. Add canola oil and let it warm. When the oil shimmers, add meatballs to the skillet and cook 3-4 min on the top and bottom of the meatball.
Transfer skillet to the oven, and cook for 5 minutes or until cooked through.
Serve with sliced veggies and drizzle with extra virgin olive oil.
Notes
You can also use lamb instead of beef for this recipe.
