This Chicken Gorgonzola recipe is the most delicious combination of tender chicken, savory mushrooms, and juicy cherry tomatoes all brought together in a rich gorgonzola sauce.
Heat olive oil in a large skillet over medium heat. Add sage leaves and fry for 3 minutes per side, until crisp. Set on a paper towel to drain.
Combine salt, black pepper, and flour in a medium bowl. Mix well, and dredge chicken breasts in flour mixture.
In the same pan over medium heat, sauté chicken for 5 minutes per side, until golden brown. Set aside on a plate.
Add sliced mushrooms to the pan. Sauté for 8-10 minutes, until turning golden. Add tomatoes and sauté for an additional 4-5 minutes, until wilted. Transfer mushrooms and tomatoes to a plate.
Add garlic to the pan. Sauté for 1-2 minutes on medium heat, until fragrant.
Add white wine and chicken stock to the pan. Bring to a simmer and reduce to half.
Add gorgonzola cheese and whisk until smooth, then add half and half.
Add chicken, mushrooms, and tomatoes to the sauce. Top with sage and serve.
