Heat olive oil over medium heat in a skillet. Fry eggs for 3 minutes, then cover with a lid to finish cooking. Sprinkle with a pinch of salt and pepper and remove from heat.
Assemble breakfast bowls by dividing rice between two bowls. Add sliced avocado, arugula, and cherry tomatoes to each bowl.
Top each bowl with a fried egg and 1 tablespoon of soy sauce and serve.
