Instructions
Preheat oven to 425F.
In a large bowl, combine melted butter, olive oil, parmesan cheese, Italian seasoning, salt, and black pepper. Mix well.
Add potatoes and stir, ensuring parmesan is the flat side of each potato.
Transfer potatoes to a baking sheet flat side down. Bake for 25-30 minutes, until golden brown.
Top with Italian parsley and serve.
