olive oil

teaspoon
salt

teaspoon
black pepper

tablespoon
rosemary
fresh or dried

thyme
fresh or dried

tablespoon
oregano
fresh or dried
Instructions
Preheat the oven to 500 F.
Mix together the olive oil, salt, pepper, rosemary, thyme, and oregano. Rub the seasonings over the roast. Cook the roast for 10 minutes.
Reduce the oven temperature to 350 F and cook the beef for another hour, or until a meat thermometer inserted into the roast reads 135 F.
Remove the roast from the oven and let it rest for 20 minutes before slicing.
