zucchini
sliced into ¼ in fries
¾
cup
flour
3
eggs
2
cups
breadcrumbs
½
cup
parmesan cheese
5
cups
Vegetable Oil
sunflower oil or canola oil also work great
Salt
to taste
Instructions
Place zucchini sticks on a paper towel and sprinkle with salt. Rest for five minutes, then pat dry.
Add flour, eggs, and breadcrumbs to separate bowls. Beat the egg. Mix the parmesan with the breadcrumbs.
Working in batches, coat the zucchini in flour, then egg, then breadcrumbs.
Heat the oil in a large pot to 350 degrees.
Place ~20 breaded zucchini in a strainer and carefully place into the oil. Fry for 5-6 minutes, until golden brown.
Remove zucchini from the oil and let drain on paper towels. Repeat process until all zucchini are fried. Sprinkle with salt and and serve.
